The derivation is the honest answer to the question every incumbent page fudges - no UK statute says 'install a grease trap'; the requirement is the combined effect of a sewer-discharge offence, a building-regulation guidance clause recommending a BS EN 1825 separator, a producer duty of care over the waste once it leaves, and a trade-effluent consent - shown as a table of what each instrument actually says.
The cross-nation comparison is the figure: Scotland's Sewerage (Scotland) Act 1968 names 'grease, fat, oil' in the offence itself and carries a stated GBP 40,000 summary maximum, while England and Wales reach the same place through a general prohibition with a statutory-maximum fine and a daily further fine, and Northern Ireland through an entirely separate order.
