A critical control point is a step where control can be applied and is essential to prevent, eliminate or reduce a food safety hazard to an acceptable level. The two words that do the work are essential and applied: a step is not critical because it matters, it is critical because losing control there means the hazard reaches the customer and there is nothing later that would catch it.
How a CCP is identified
Work along the process flow and ask, at each step, whether a hazard is controlled here and whether a later step would control it instead. If a later step would, this one is not critical. Cooking is usually critical because nothing after it kills the pathogen; chopping is usually not, because cooking follows.
Setting the critical limit
Each control point needs a limit that separates safe from unsafe and can be measured on the shift: a core temperature, a time, a pH, a visual state. A limit nobody can check during service is not a limit, it is an aspiration.
Monitoring and corrective action
Who checks, with what, how often, and what they do when the limit is missed. The corrective action is decided in advance and written down, because the moment a limit fails is not the moment to start deciding whether to serve the food.
Recording without inventing
Records are the evidence the system ran. They should be completed at the time by the person who did the check. A week of identical readings entered on Friday is the pattern inspectors are trained to spot and it undermines everything else in the file.
